Rehydrating your dried active starter

Getting your dried starter ready to bake is super easy! Just follow the below steps! A kitchen scale is recommended but not necessary, starter is resilient!

  1. Add the starter
    Place 12g dehydrated starter in a clean jar.
  2. Add warm water
    Add 24g (2 tbsp) warm water (80–90°F / 26–32°C).
    Stir well and let sit 15–20 minutes to soften.
  3. First feeding
    Add:
    • 24g water
    • 24g flour (bread or all-purpose)
      Stir until smooth, cover loosely, and let sit 12–24 hours at room temperature.
  4. Second feeding
    Discard half the mixture.
    Add:
    • 50g water
    • 50g flour
      Stir and rest 12 hours.
  5. Repeat feedings
    Continue discarding and feeding 1–2 times per day using a 1:1:1 ratio (starter:water:flour) until the starter reliably doubles in 4–6 hours.
    This typically takes 2–4 days.
  6. Ready to bake!
    Once your starter doubles predictably, it’s fully revived and ready for use.
