Rehydrating your dried active starter
Getting your dried starter ready to bake is super easy! Just follow the below steps! A kitchen scale is recommended but not necessary, starter is resilient!
-
Add the starter
Place 12g dehydrated starter in a clean jar. -
Add warm water
Add 24g (2 tbsp) warm water (80–90°F / 26–32°C).
Stir well and let sit 15–20 minutes to soften. -
First feeding
Add:
- 24g water
-
24g flour (bread or all-purpose)
Stir until smooth, cover loosely, and let sit 12–24 hours at room temperature.
-
Second feeding
Discard half the mixture.
Add:
- 50g water
-
50g flour
Stir and rest 12 hours.
-
Repeat feedings
Continue discarding and feeding 1–2 times per day using a 1:1:1 ratio (starter:water:flour) until the starter reliably doubles in 4–6 hours.
This typically takes 2–4 days. -
